As global food trends shift toward healthier options, consumers are taking a closer look at the types of products they buy and their ingredients. These trends are driving the demand for naturally processed products free of chemical additives that need to be marked with an E number. In the starch industry, this means that physically modified starches, or "clean label" starches, are becoming the product of choice over chemically modified starches. We want to ensure that we are always aware of and using the latest potato starch product modification technologies to meet consumer needs. In this particular case, we need a comprehensive overview of new or emerging technologies that enable the physical modification of large-scale biopolymers. This knowledge will allow us to test some technologies, possibly in collaboration with the parties developing them, and ultimately produce clean label strength.
